Sambar(Dhal)


Vegetable Sambar Recipe: An Easy and quick method to make Sambar.
                Cooking in pressure cooker reduces the cooking time considerably. Boil the tuvar dal in a pressure cooker along with a pinch of turmeric powder, one Tomato, 3 to 4 garlic pieces, 1 green Chilly, 2 to 3 small onion pieces, 1 tea spoon of Cumin seeds( Jeera) till the dal is mushy and completely cooked.
           Simultaneously Boil the Vegetables(I use Drumstick, brinjal, carrot) in the masala water separately. The masala water comprises chilli powder, coriander powder, salt. The mashed dal is added to the cooked vegetables. Take some warm water and soak the tamarind in it for 10 mins. Add 2 to 3 cups of water.Now add the tamarind pulp as it lends a slight flavor. Add Some Coriander  leaves.Stir well and and cook  on low to medium flame for 5 min.
          Finally In a pan, heat oil. Add mustard seeds. When it starts crackling, add the curry leaves,  Cumin seeds, fenugreek seeds and asafoetida. Fry them till they are done. Now add this mixture in the hot sambar.Sambar can be served with steamed rice, idlisdosas.
